*My granny sent Sarah Sterling an Easter Apron. She loved it and was really pumped to try it out. So after some Pinterest perusing, I found a recipe for Strawberry Bread in which I had all ingredients. (Also Publix had Florida strawberries 3 for $5 that were really good and I had waiting in my fridge). SS helped me pull out all the ingredients while wearing her new apron and then it was time for bed with promises of cake for breakfast.
*I learned a tip while making this, if you coat your fruit in a few tablespoons of flour before folding it into the batter, they won't sink to the bottom. GENIUS.
*The ingredients ready and waiting (I was really waiting for that butter to soften)
*CAKE for Breakfast! It was a success.
1 cup of fresh strawberries, roughly chopped
2 tablespoons of flour
1/2 cup of butter, softened to room temp
1 cup of white granulated sugar
2 eggs
1 1/2 teaspoons of vanilla
1 tspn of baking powder
1/2 teaspoon of salt
1/2 cup milk
1 3/4 cups of flour
Preheat oven to 350. Grease 9x5 loaf pan and set aside. In a small bowl mix strawberries with the 2 tablespoons of flour, until all are well coated. (**This keeps them from all sinking to the bottom of pan!) In a mixer, cream together sugar and butter until fluffy. Add in eggs and vanilla. Scraping the sides when necessary. Add salt and baking powder to flour mixture. Now, alternate adding milk and flour mixture to the bowl and stir. Mix until all in incorporated. Fold in your floured strawberries and pour into the loaf pan. Bake for 50 minutes-60 minutes. Top will be golden and if toothpick test is done it should come out clean. Let cool on baking rack for at least 15 minutes before inverting.
Serve and enjoy!
I am ready for some spring produce!! The original recipe was found at Cookies and Cups. She glazed the bread, but I chose not too because I didn't have any cream cheese. This was a yummy quick bread that I will make again. I bet it would be divine with some whipped cream or vanilla ice cream! Try it and let me know what you think.
Strawberry bread sounds yummy!! I could actually make this easily since I have all the ingredients at home already. SS looks so cute eating her "cake"!

ReplyDeleteGirl I am READY for Spring Produce but the poor Strawberry farmers are spending a fortune on frost prevention. I can get FL strawberries at publix so i slice them and sprinkle with splenda and leave in fridge. I could eat berries all day!
